HEALTHY QUINOA POHA
INGREDIENTS:
1cup quinoa
2cups water
2 tbsp oil
½ tsp mustard seeds
½ tsp cumin seeds
Pinch of hing
½ tsp turmeric powder
2green chilies, chopped
1-2 boiled potatoes, cubed
1-2 onions, chopped
Roasted peanuts
Few curry leaves
Fresh coriander leaves, chopped
1-2 tbsp grated fresh coconut
Salt to taste
Pinch of sugar( optional)
Lemon
INSTRUCTIONS:
rinse the quinoa a few times to remove bitterness. Soak the quinoa for 15-20 mins. Then cook the quinoa with water( 1:2 ratio, just like rice. Keep aside
Heat oil in a pan
Add mustard seeds, cumin seeds, and hing
Once the seeds start to splutter, add green chilies, curry leaves, and onion
Fry for few mins ( until translucent only, no need to turn the onions golden)
Add boiled potatoes and sauté for a min
Add peanuts, turmeric, salt, and sugar
Fry for 1-2 mins
Add quinoa and mix well
Adjust seasoning and that’s it, your healthy quinoa poha is ready
Garnish with coriander leaves, grated coconut, and a slice of lemon.
Enjoy hot with a cup of masala chai
