TAIWANESE BRAISED TOFU STEAMED BAOS WITH PICKLED VEGETABLES
INGREDIENTS FOR THE PICKLE:
carrots, julienned
Cucumber, julienned
Radish, julienned
Bell pepper, julienned
Red bell pepper, julienned
Onions, sliced
Green chillies, sliced
1cup Vinegar
½ cup Water
½ cup Sugar
1tbsp Salt
INSTRUCTIONS:
dissolve the vinegar, water, sugar and salt
Heat up the liquid ( use low heat )
Add all the julienned veg and switch off gas
Leave aside to cool
It’s done
Spices may be added to this pickle according to your taste
INGREDIENTS FOR TOFU:
tofu , cut into cubes
Spring onion, chopped
1tbsp garlic paste
1tsp ginger paste
1-2 tbsp Chinese 5 spice powder
¼ cup soya sauce
¼ cup dark soya sauce
1tsp sugar
¼ cup rice wine
1tsp hoisin sauce
1tsp siracha sauce
1tsp chilli powder
Salt
Cornstarch slurry
1-2 tbsp Oil
Seasme seeds and spring onion for garnish
Coarsely ground roasted peanuts
INSTRUCTIONS
mix all ingredients together except cornstarch slurry to prepare the marinade
Add tofu and marinate for atleast 1 hour
Heat oil in pan
Drain and add marinated tofu pieces to fry it until slightly crispy
Drain and keep aside
Add the remaining marinade to the same oil
Simmer for 2-3 mins
Add fried tofu and continue to simmer for 2-3 mins
Add cornstarch slurry
Mix well
And that’s it, your delicious tofu is ready to be stuffed into your soft Baos
