VERSATILE, BETTER THAN STORE BOUGHT SCHEZWAN CHUTNEY
INGREDIENTS
100 gms whole red chillies ( I mixed byadgi and Kashmiri red chillies because I like it to be spicy ) you can deseed the chilies if desired
1cup Oil
⅓ cup garlic, chopped
3tbsp ginger, chopped
2 tbsp celery, chopped
2-3 tbsp ketchup
2-3 tbsp vinegar
1tsp sugar
1tsp light soya sauce
2-4 tbsp chilli sauce
2-3 tsp Salt or to taste
Sichuan pepper powder( optional)
INSTRUCTIONS
remove stems of chillies and boil them for 15-20 mins until soft
Cool, strain and grind to a coarse paste, without adding water. reserve boiled chilli water for use later if needed
Heat oil in a pan and fry garlic until slightly golden
Add ginger , celery and cook for 2-3 mins on med
Add the coarse chiili paste and fry for 8-12 mins on high until oil separates on surface
Add ketchup, soya sauce, vinegar, sugar, salt,chilli sauce and continue to cook for 10-15 mins on high
U can add reserved chilli water to adjust consistency
Adjust seasoning and that’s it, your Versatile, better than store bought Schezwan Chutney is ready
Cool completely before storing in a dry sterilised jar
