Pininyahang Manok Sa Gata
Delicious Filipino pineapple chicken with coconut milk
INGREDIENTS:
500 gms of breast chicken( traditionally legs and thighs are used
½ carrot diced into chunks
½ potato diced into chunks
½ onion diced into chunks
½ red and green bell pepper cut into chunks
1-2 slices of fresh pineapple cut into chunks ( can use canned too )
3-4 cloves of garlic chopped
1-2 fresh green chilies
½ cup of coconut milk
½ tbsp fish sauce
2 tbsp oil
Salt and pepper to taste
INSTRUCTIONS:
Cut breast chicken into pieces
Marinate with a little garlic, salt, pepper and pineapple juice( to infuse the pineapple flavour into the chicken)
Heat 1 tbsp oil in a wok or pan
Add carrots and potatoes and fry them on med-high heat until browned and slightly cooked
Add bell pepper and pineapple pieces
Add salt and pepper and fry for another 1-2 mins
Remove from heat and keep aside
In the same wok heat up another tbsp of oil
Add green chilie, garlic, and onions
Sauté for 1-2 mins
Add chicken
Add fish sauce and black pepper
Fry on med-high until chicken pieces start to brown slightly
Add any remainder pineapple marinade to the chicken
Continue cooking on med
Add coconut milk
Cover and cook until chicken is almost tender ( can add hot water if more sauce is desired)
Add the vegetables and cook for another 5 mins
Make sure chicken and vegetables are fully cooked
Reduce the sauce on med-high heat according to your preference
Adjust seasoning
Turn off gas
Your delicious pineapple chicken is ready
Enjoy with steamed rice
