PININYAHANG MANOK SA GATA Asian RecipesFilipino recipesCurriesChicken 23 Jul Written By Shilpa Anand Pininyahang Manok Sa GataDelicious Filipino pineapple chicken with coconut milkINGREDIENTS: 500 gms of breast chicken( traditionally legs and thighs are used½ carrot diced into chunks½ potato diced into chunks½ onion diced into chunks½ red and green bell pepper cut into chunks 1-2 slices of fresh pineapple cut into chunks ( can use canned too ) 3-4 cloves of garlic chopped1-2 fresh green chilies ½ cup of coconut milk ½ tbsp fish sauce 2 tbsp oil Salt and pepper to taste INSTRUCTIONS:Cut breast chicken into piecesMarinate with a little garlic, salt, pepper and pineapple juice( to infuse the pineapple flavour into the chicken)Heat 1 tbsp oil in a wok or panAdd carrots and potatoes and fry them on med-high heat until browned and slightly cooked Add bell pepper and pineapple piecesAdd salt and pepper and fry for another 1-2 minsRemove from heat and keep aside In the same wok heat up another tbsp of oilAdd green chilie, garlic, and onionsSauté for 1-2 mins Add chicken Add fish sauce and black pepper Fry on med-high until chicken pieces start to brown slightlyAdd any remainder pineapple marinade to the chicken Continue cooking on medAdd coconut milk Cover and cook until chicken is almost tender ( can add hot water if more sauce is desired) Add the vegetables and cook for another 5 mins Make sure chicken and vegetables are fully cooked Reduce the sauce on med-high heat according to your preferenceAdjust seasoning Turn off gasYour delicious pineapple chicken is ready Enjoy with steamed rice Shilpa Anand
