MATAR KA NIMONA - UTTAR PRADESH WINTER SPECIAL
INGREDIENTS
Garlic
Ginger
2-3 Green chillies
Bunch of Coriander
½ cup green peas, coarsely ground
¼ cup green peas
2-3 tbsp Oil( mustard)
1-2 potatoes, cut lengthwise
1tsp Cumin seeds
Pinch of hing
2-3 dry red chillies, broken
½ tsp Red chilli powder
¼ tsp turmeric powder
1tsp Coriander powder
½ tsp Cumin powder
½ tsp Shilpa’s Masala Mill Garam masala
1-2 tomatoes, chopped or sliced
Salt to taste
INSTRUCTIONS
grind the coriander leaves, ginger, garlic and green chillies to a fine paste. Set aside
Grind the ½ cup green peas to a coarse paste. keep aside
Fry the potatoes in oil until slightly golden and set aside
Now in the same oil fry, the peas paste on med flame for at least 15 mins until the paste is dry and nicely Bhunaoed( stir continuously )
Remove and set aside for use later
Add oil in a kadhai and add hing, cumin seeds and dry red chilli
Add the ground coriander paste and fry for few mins
Add whole green peas and dry masalas and fry
Add tomatoes and continue to fry for few more mins
Cover and cook until peas are slightly cooked and oil separates on surface
Add the mashed peas and potatoes
Add hot water and simmer for few mins
Adjust seasoning and consistency
That’s it, your tasty Matar ka Nimona is ready
Enjoy hot with Rotis, rice, puris
