HOMEMADE TUTTI FRUTTI (with raw papaya)
Ingredients
1raw papaya, peeled and cut into small cubes. This should be around 3 cups
Water
1 cup Sugar
1cup water
Food colours as desired
Food essences as desired
INSTRUCTIONS
boil the chopped papaya for 5-7 mins until 50% done and slightly translucent
Strain and keep aside
Add sugar and 1cup water to a pan and boil until sugar dissolves
Add the boiled papaya to it and cover and simmer for 10-15 mins until sugar syrup reduces in quantity
Remove from fire and divide into 3 bowls
At this point, you can add your favourite colour and essence to each bowl to stain the cooked papaya.mix well
I’ve used pandan, saffron and strawberry essence
Leave covered for 10-12 hours
After 12 hours strain the candied papaya if any excess sugar syrup
Store in freezer for up to 6 months in an airtight container
Use this delicious tutti frutti for ice creams, cakes, desserts etc
