CHETTINAD’S KAARA CHUTNEY
INGREDIENTS
2onions , sliced
10 dry chillies
2-3 Tomatoes
Small piece ginger
15 cloves of garlic
Curry leaves
Coriander leaves
Pinch of turmeric
½ tsp chilli powder
¼ tsp Mustard seeds
¼ tsp urad dal
Salt to taste
Gingelly Oil
INSTRUCTIONS
Heat oil in pan
Add chillies, ginger. Garlic, curry leaves
Add onions and cook until 40% done
Add tomatoes and sauté
Add turmeric powder, salt
Add coriander leaves and mint leaves( optional)
Add chilli powder and sauté for a minute
Cool the mix and grind it to fine paste
Add water if required
Heat oil in tadka pan and add urad dal, red fry chillies, curry leaves and mustard seeds
Once they splutter add the chutney to it and sauté for a minute until everything combines
That’s it , your authentic Kaara chutney is ready
