CHOCOLATE MOCHI COOKIES
INGREDIENTS FOR MOCHI
70 gms glutinous rice flour
20 g cornstarch
15 g sugar
140 g milk
15 g unsalted butter
INSTRUCTIONS
mix everything (except butter) well in a glass bowl
Wrap with cling wrap and steam for 30 mins(prick few holes to help release the steam)
Remove and add butter while Mochi is still hot
Mix well
Wrap with cling wrap again and leave it aside to use later
INGREDIENTS FOR COOKIES
100g unsalted butter
100 gms brown sugar
1egg
180 gms all-purpose flour
20 g cocoa powder
2gms baking powder
50 gms chocolate chips
Pinch of salt
INSTRUCTIONS
whisk together the butter and brown sugar well until well combined
Add the egg and mix well
Add flour, baking powder, salt and Cocoa powder
mix well
Refrigerate for 30 mins
LET’S MAKE COOKIES
Preheat oven at 190 c
take 10 gms of Mochi and roll into a ball
Make around 20 balls
Now take cookie dough
Fill Mochi inside and shape it into a ball
Flatten slightly to make cookie shape
Add chocolate chips on surface of the cookie
Bake at 190 for 12 mins
Remove , cool and enjoy
