DABELI
INGREDIENTS FOR DABELI MASALA
¼ cup coriander seeds
1tbsp cumin seeds
½ tbsp fennel seeds
1-2 black cardamom
1-star anise
1-2 cloves
6-8 black peppercorns
½ tbsp white sesame seeds
1inch cinnamon
1bayleaf
1-2 Shilpa’s Masala Mill Kashmiri chilli powder
1tsp black salt
1tsp red chilli powder
Pinch of hing
2 tbsp dry coconut
INSTRUCTIONS
Dry roast coconut
DRY roast all other ingredients until fragrant
Grind everything together to powder form

Your dabeli masala is ready
INGREDIENTS FOR RED GARLIC CHUTNEY
6-8 Kashmiri chillies, soaked for few hours
6-8 garlic cloves
Salt
½ tsp sugar
Chilli powder
1-2 tbsp Peanuts
Oil
INSTRUCTIONS
Drain and use chillies
Grind everything to paste form
Your spicy red chutney is ready
MASALA PEANUTS
¼ cup roasted peanuts
1-2 tbsp dabeli masala
INSTRUCTIONS
MIX THE peanuts and Dabeli masala with little oil and that’s it. Your masala peanuts are ready
OTHER INGREDIENTS
1-2 BOILED potatoes, grated or mashed
Chopped onions
Chopped coriander
Tamarind chutney( sweet, tangy )
Green coriander and mint chutney
Nylon Sev
Pomegranate seeds
Butter
Pav ( bread )
INSTRUCTIONS
Mix the tamarind chutney with coriander chutney (3:1)
Heat oil in a pan
Add dabeli masala
Add boiled potatoes and mix well
Add salt
Add hot water and cook for few mins
Adjust seasoning and spices
That’s it, potatoes mix is ready
Remove in a container and cool
Garnish with grated coconut, masala peanuts, onion, sev , coriander and pomegranate seeds
LET’S MAKE DABELI
Slice the pav
Add tamarind chutney on one side
Add RED chutney on another side
Stuff the potatoes masala
Add onions, coriander, peanuts
Press and toast on a griddle with butter
Dip in sev and coriander mix and serve
Your delicious Dabeli is ready
