EGG MAMNA Gravy - SURAT SPECIALITY (Egg koftas topped with onion tomato gravy with coriander and grated cheese)
INGREDIENTS to make the egg koftas
4 boiled eggs, grated
2 tsp garlic paste
2 tsp ginger and green chilli paste
1/2 tsp black pepper powder
Salt to taste
1 tsp coriander-cumin powder
¼ tsp turmeric powder
Little green garlic, chopped optional
Coriander leaves
½ tsp Shilpas Masala Mill kitchen king masalaa
1 egg, beaten ( enough for binding )
INSTRUCTIONS
mix everything together
Add beaten egg (little by little..just enough for binding the mixture )
Make small balls and shallow /deep fry on med heat until golden on both sides
Drain and keep aside
INGREDIENTS TO MAKE GRAVY
1-2 onion, chopped
1 tsp garlic paste
1 tsp ginger and green chillies paste
2-3 tomatoes,puréed (i added some tomato paste too)
¼ tsp turmeric powder
1tsp red chilli powder
1 tsp coriander-cumin powder
1-2 tsp Shilpas Masala mill Kitchen king Masala
Salt to taste
1 tsp green garlic ( optional)
Water
Processed cheese cube
2 tbsp cream
INSTRUCTIONS TO MAKE GRAVY
In the same oil, you fried the koftas, add chopped onion and fry until slightly golden
Add garlic paste, ginger and green chilli paste
Fry well until rawness disappears
Add tomato purée and fry well
Add all the powdered spices and green garlic
Continue to fry well for 2-3 minutes
Now add water and mix well
Adjust consistency
Grate the processed cheese in it
Add cream and mix well
Simmer for a few minutes
Add butter if desired
That’s it, your Gravy is ready

Garnish with coriander leaves, tomato slices and lemon
