SAMBHARIYA KHICHADI
INGREDIENTS
¾ cup basmati rice
¾ cup split green mung dal
1tbsp ginger garlic paste
2cups chopped coriander leaves
¼ cup garlic leaves
Salt to taste
2tsp cumin-coriander powder
¼ tsp turmeric
2tsp red chilli powder
3-4 small onions
3-4 small potatoes
3-4 small baingan ( purple eggplants)
¼ tsp hing
2-3 tbsp Ghee
Water
INSTRUCTIONS
Wash and soak the dal and rice for 30 mins
Mix together the coriander leaves, garlic leaves, and powdered spices.ginger-garlic paste and salt to make stuffing masala
Cut the vegetables to be able to stuff the masala into them
Stuff the vegetables and reserve excess masala to use later
Now heat ghee in a pressure cooker and add dry red chillies
Add the stuffed vegetables and fry for 3-4 mins
Add the remaining reserved masala and fry for 1min
Add more seasoning and spices if required
Add rice and fry for 1-2 mins
Add water and pressure cook until done
That’s it, your healthy and nutritious Sambhariya Khichadi is ready
Enjoy with a dollop of ghee, pickle, papad and Kachumber
