KASHMIRI CHICKEN MASALA
INGREDIENTS
1.5 kg chicken, cleaned, curry cut ( today I’ve used breast chicken)
1-2 tsp turmeric powder
1-2 tsp of red chilli powder
1 tsp Salt
1cup mustard oil
3-4 medium Onions, chopped
2 tbsp ghee
2tbsp ginger garlic paste
4-5 tomatoes,puréed or grated
2 tbsp Shilpas Masala Mill Kashmiri chilli powder
1tsp red chilli powder ( spicy)
1 tbsp turmeric powder
1tbsp Shilpas Masala mill Special garam masala powder
2 tbsp coriander powder
1tbsp cumin powder
2-3 tbsp Dahi
150-200 ml milk
Water
Coriander leaves, chopped for garnish
INSTRUCTIONS
marinate chicken with turmeric, chilli powder and salt. Leave aside for at least 60 minutes
Heat the mustard oil in a kadhai or deep pot
Fry the chicken pieces 3-4 mins on each side until they have browned.no need to fully cook the chicken
Remove for use later
In the same kadhai add chopped onions and fry well until golden
Add ghee and continue to fry
Add ginger-garlic paste and fry
Add tomato purée and sauté for 5 mins
Add dry spice powders and fry(bhunao)well
Add water and cook the masala for another 5 minutes until oil separates on surface
Add curds and fry
Add little water and bhunao masala for another 4-5 minutes
Add milk and mix well
Add fried chicken and sauté for 3-5 mins
Add water, cover and simmer for 10 minutes or until chicken is ready
That’s it, your delicious Kashmiri chicken Masala is ready
Garnish with coriander leaves and enjoy with rotis, rice,puris
