Maharashtrian PALAK GARGATTA
Ingredients
1bunch( 2bowls) spinach, washed and chopped
2tbsp chana dal, soaked for 30 mins
4 tbsp tuvar dal, soaked for 30 mins
1tomato
2tbsp peanuts ( more if you like)
Little Turmeric powder and salt
INGREDIENTS FOR TADKA
oil
Mustard
Cumin
Hing
2 tsp Green chilli and garlic paste
½ onion( optional)chopped
Turmeric powder
2 tsp Besan
1tsp peanut powder
Little jaggery
Salt as needed
Tamarind if needed
INSTRUCTIONS
pressure cook all the ingredients together
When cooled, mash it all up
Now in a kadhai, heat oil
Add mustard, cumin, hing
Add the curry leaves, chilli and garlic paste and onion. fry for few minutes
Add besan and peanut powder and fry for 1-2 minutes
Add the mashed daal
Add jaggery, salt and tamarind
Adjust consistency and simmer it for few minutes
That’s it, your nutritious Palak Gargatta is ready
Enjoy with bhakris, rice
