PERI PERI CHICKEN
Peri Peri Chicken with Spiced Rice , Masala Fries , Salad and Homemade Peri peri sauce.
This meal is inspired by Nandos Peri peri chicken meal.
This is my version
INGREDIENTS FOR PERI PERI SAUCE AND MARINADE:
1 onion, cubed and layers are separated
½ red bell pepper
6-7 cloves of garlic
1-2 thick, long red chillies( not too spicy)or Serrano
3-4 fresh red chillies( spicy)or Thai red chilli
Salt to taste
Pinch of Sugar
½ tsp Black pepper
1-2 tbsp Vinegar
½ lemon juice
1tbsp PAPrika
1tbsp Oregano or mixed herbs
Lemon jest
1-2 bay leaves
1-2 tbsp oil
INSTRUCTIONS:
Roast the onions, garlic and peppers until they are slightly charred. You can use 2-3 drops of oil if needed
Cool the mixture
Mix all other ingredients except oil and bay leaf and blend to paste
Transfer paste into a small pot. Add bay leaves and cook the sauce on med heat by allowing to simmer for 20 mins
Remove bay leaves
Add a little more vinegar, lemon juice and oil
Blend this mix until smooth
And that’s it, your peri peri sauce is ready
MARINADE FOR CHICKEN
3-4 tbsp of peri peri sauce
500 gms chicken( you may keep the skin on)
1-2 tbsp chilli powder
1tsp mixed herbs
INSTRUCTIONS
Marinate the chicken with the above marinade by rubbing it well.I have added chilli powder and black pepper as I like it spicy
Leave it overnight or for 2-3 hours at least
Heat pan with oil
Cook the chicken on high until char marks appear. Now turn flame to low and slow cook the chicken
Occasionally baste the chicken with the marinade. You can add some water and cover and cook the chicken for 5-6 mins
Once the chicken is cooked keep aside.
INGREDIENTS FOR SPICED RICE
1cup basmati rice washed, soaked in water for at least half-hour
Chopped red capsicum
Chopped carrot
Chopped green chilli
Chopped green capsicum
Salt to taste
½ -1tsp Curry powder
Onion chopped
¼ tsp Turmeric
½ tsp mixed herbs
Yellow food colour ( optional)
OIL
INSTRUCTIONS
Heat oil in a deep pan
Add onions and fry
Add other vegetables and all the other ingredients
Fry for few mins
Add soaked rice
Fry for 2-3 mins
Add enough water (1:2 ratio ) to cook the rice
That’s it, garnish with coriander leaves
INGREDIENTS FOR MASALA FRIES
1-2 large potatoes, peeled and cut into French fries
2tsp Cornflour
2tsp All-purpose flour
Garlic powder
Onion powder
Red chilli powder/chilli flakes
Salt
Black pepper powder( optional)
INSTRUCTIONS:
SOAK the French fries in cool water for 30 mins IN FRIDGE
Now soak them in hot water for 10-15 mins
Drain and pat dry
Now add all the remaining ingredients and toss them to evenly coat the fries
Heat oil in a pan
Fry the French fries in batches until they are golden and crispy
And that’s it, your delicious crispy masala fries is ready
SERVE
Serve the peri peri chicken with mixed salad, spiced rice, masala French fries and the homemade delicious peri peri sauce
