LOHRI SPECIAL - GUR PARE OR GUD PARA
Traditional Punjabi sweet made during festivals like Lohri
INGREDIENTS
2cups maida
¼ cup ghee( melted)
½ tsp baking powder
Pinch of salt
100 ml warm water ( or less)
Oil for frying
2cups jaggery ( crushed)
1-2 tbsp water
1tbsp fennel seeds
1tbsp ghee ( optional)
INSTRUCTIONS
Take flour in a bowl and add melted ghee
Mix the flour and ghee very well
Now add a pinch of salt, baking powder
Slowly add warm water to make a stiff dough ( not too soft and not necessary to knead it for a long time)
Just bring the dough together and leave aside covered for 30 mins
Roll it out ( not too thin) and cut into desired shape
Heat oil on low
Drop the first batch of Paras into the oil and let it cook ( it takes at least 8-10 mins for them to cook fully) until they are golden brown in colour
Remove and keep aside
Now in another pan melt the jaggery with 1-2 tbsp water and allow it to melt on a low flame
Keep stirring
Once the jaggery starts to bubble (check for 2 string consistency or add few drops in water.. it should harden immediately)add the fennel seeds
Now add the Paras to the jaggery and stir gently in order to coat each piece well
Switch off the flame, transfer to another plate and let the gud paras cool down completely
You can separate them while they are still warm for better presentation
And you are done
