DUDHI KE THEPLE
INGREDIENTS
1cup wheat flour
½ tbsp besan
1cup grated dudhi ( Lauki, bottle gourd)
2 tsp ginger garlic and green chilly paste
1tsp sesame seeds
Pinch of hing
¼ tsp ajwain ( carrom seeds)
1tbsp oil
Salt to taste
½ -1tsp sugar
Chopped coriander
Chopped green garlic( optional)
1tbsp malai or cream ( Dahi can be used instead of or increase the amount of oil if not using Dahi or malai)
Ghee
INSTRUCTIONS:
Mix everything in a bowl
Knead to make a stiff dough
Keep aside for ½ hour ( can keep overnight in the fridge to make fresh theplas in the morning for breakfast )
Remove from fridge
Roll into small roundels
Roll out into roti shape and thickness
Roast on tavaa (flat pan) on both sides applying ghee
And that’s it, your easy and delicious dudhi Theplas are ready
Enjoy with chutney and khatta mittha nimboo ka achaar
