GOAN MIX BHAJI (chanyacho Ros and Potato bhaji)
Goan mix bhaji is a combination of dried green or white peas gravy ( chanyacho ros) and potato dry bhaji and is usually served in all local restaurants in goa( especially for breakfast ) with pao ( bread)
INGREDIENTS for CHANYACHO ROS
250 gms Dried green or white peas( vatana) , soaked in water overnight
½ cup grated coconut
1med onion, sliced for roasting
1med onion for sauté
Salt to taste
Turmeric
1.5 tsp Goan garam masala powder( or 1tsp Shilpa’s Masala Mill Garam Masala and 1tsp Shilpa’s Masala Mill Special Goda masala)
1tsp chilli powder OR Shilpa’s Masala Mill Everyday Masala
1-2 green chillies, slit
Curry leaves
Coriander leaves
Tamarind
Jaggery or sugar
Oil
INSTRUCTIONS
Pressure cook the vatana with salt for 4-5 whistle or until soft
Heat oil in a pan
Add onions and sauté until light brown
Add grated coconut and sauté until golden brown
Cool the mixture
Add garam masala, turmeric,chilli powder,tamarind, water and grind into a fine paste
Now heat oil in a pan
Add mustard seeds and allow to splutter
Add curry leaves, green chilly and onions
Sauté until translucent
Add the ground masala and cook for 1-2 mins
Add the boiled peas
And simmer covered for 5-10 mins
Add salt, jaggery and coriander leaves and that’s it .. your Chanyacho ros is ready
INSTRUCTIONS FOR POTATO BHAJI
Heat oil in a pan and add cumin seeds, mustard seeds, curry leaves,ginger-garlic and hing
Sauté for 1-2 mins
Add onions and sauté till translucent
Add green chillies and turmeric powder and sauté for few mins
Add cubed potatoes, mix well and add salt
Add enough water to cover and cook the potatoes on low flame
Add coriander and you are done( consistency should be slightly runny)
SERVE
serve the GOA mix Bhaji with pao , garnished with chopped onions, coriander and chilly
