CHICKEN IN HOT GARLIC SAUCE
INGREDIENTS for marinade
1-2 eggs
Salt to taste
2tsp ginger garlic paste
2tbsp maida
4tbsp cornflour
1 tsp Pepper powder
400 gms boneless chicken, cut into cubes
INSTRUCTIONS
Mix everything well and leave the chicken to marinate for 1 hour
Deep fry the chicken pieces until golden brown
Keep aside
INGREDIENTS FOR SAUCE
7-8 spring onion bulbs, chopped
1 green chilly, finely chopped
4 tbsp chopped garlic
½ tbsp chopped ginger
2 tbsp garlic paste
4 tbsp red chilli sauce
10 tbsp tomato sauce
4 tsp soya sauce
1tsp black pepper powder
1tsp vinegar
4 cups chicken stock
Cornflour slurry
Capsicum cubes
Onion cubes
Coriander leaves and spring onion for garnish
INSTRUCTIONS
Heat oil in a pan
Add spring onion bulbs
Fry for 1-2 mins
Add green chilly, chopped garlic and ginger and fry for 1-2 mins on high flame
Add garlic paste and fry for a min
Add all the sauces, black pepper powder and vinegar
Cook for a min
Add chicken stock and simmer for few mins
Add cornflour slurry to adjust consistency
Add capsicum cubes, onion cubes and fried chicken
Add chopped coriander and cook on low heat for 2-3 mins
That’s it, your chicken in hot garlic sauce is ready
Garnish with spring onions and serve with fried rice or fried noodles
