CHICKEN SATAY WITH HOMEMADE SATAY SAUCE
INGREDIENTS FOR SAUCE
6-7 shallots
oil
2inch ginger
2inch galangal
2stalk lemon grass
4-6 garlic
500 gms peanuts ,with skin
1tbsp dried shrimp,soaked
1cup chilli paste
600-800 ml Water
2-3 tbsp tamarind juice
Palm sugar
2tbsp sweet soya sauce or kecap manis
1tbsp white sugar
Salt
INSTRUCTIONS
Chop the shallots, garlic,ginger ,galangal,lemon grass
Heat oil and stir fry everything for few mins
Remove, cool and grind it with little water and soaked shrimp
Fry the peanuts in oil remove and cool
Grind all peanuts to powder form
Heat oil and fry the ground shallot paste
Add chilli paste and fry well
Add water and the peanuts powder
Add tamarind juice, sweet soya sauce ,palm sugar,sugar and salt
Cook until oil separates.
Adjust seasoning
That’s it , your delicious satay sauce is ready

INGREDIENTS FOR CHICKEN SATAY
6 Garlic
Little Galangal
1 Lemon grass(white part)
8-10 shallots
2-3 chicken breast or thighs, thin slices
2tsp turmeric powder
1tsp Coriander powder
1tsp Cumin powder
1tsp Fennel seeds powder
1tbsp tamarind juice
Salt
Palm sugar
2tbsp Oil
INGREDIENTS TO BRUSH ON THE CHICKEN SATAY
3tbsp oil
3tbsp Coconut milk
3tbsp honey
INSTRUCTIONS
Grind together the shallots, galangal,lemon grass,turmeric,coriander powder,cumin powder,fennel powder,tamarind juice, salt ,oil and palm sugar to paste
Marinate chicken in this paste for atleast 3-4. Hours
Skewer marinated chicken
Mix the ingredients for brushing over chicken
Brush over skewered chicken and fry or grill
Turn them around and brush with mixture again
Grill for another 3-4 mins or until it’s fully cooked
That’s it
Serve Chicken satay with satay sauce and with cucumbers and onions
