GOAN PRAWN CALDINE WITH BOTTLE GOURD
CALDINE curry is a popular Goan non-spicy ( mild) yellow curry made with fish, prawns and a vegetable like cauliflower, lady’s finger, bottle gourd.
I have served this Prawn Caldine with Spinach Bhaji, Koshimbir and steamed rice

Grind together coconut, coriander seeds, cumin seeds, black pepper, garlic, ginger, turmeric, green chilly, rice and tamarind to a very fine paste
Strain to get smooth coconut milk. You can strain the mixture twice to get thick coconut milk and thin coconut milk
Keep the CALDINE masala aside
Discard the sieved coconut remainders
Heat oil in a pan
Add onions and fry until slightly golden
Add green chillies and tomato
Fry for few mins until tomatoes are softened
Add the bottle gourd and fry for 1-2 mins. Add salt and a little turmeric
