Malvani Kombdi Vade - Malvani chicken curry and vade
Ingredients for Vade
2cups Shilpas Masala mill Special Thalipeeth (Bhajani) flour
Little turmeric
Little red chilli powder
Salt to taste
Hot water
Instructions
Mix the flour with the above ingredients adding hot water a little at a time
When it cools down knead with hand until smooth ( not too soft and not too hard )
Cover and leave aside for 3-4 hours
Divide into equal round balls
Take a plastic sheet or ziplock bag
Wet the surface
Add the dough ball and with a wet hand press on it to spread it into a poori shape ( not too thick or thin)
Heat oil for deep frying
Add the flattened dough into the hot oil and fry until golden on both sides. keep flame at medium.

INGREDIENTS FOR MALVANI CHICKEN CURRY
1kg chicken,washed, cleaned curry cut
Β½ tsp turmeric powder
2tbsp ginger, garlic, green chilli and coriander paste
3-4 tbsp Shilpas Masala mill Malvani masala
Salt to taste
1-2 Onion, chopped
1 Tomato, chopped
1-2 Bay leaf
2-3 tbsp Vatan masala ( roasted dried coconut, garlic, ginger and onion paste)
Coriander for garnish
Oil
INSTRUCTIONS
marinate the chicken with green paste, turmeric powder and salt for 1 hour
Heat oil in a kadhai
Add bay leaf and onions
Fry for few mins
Add tomato and fry until softened
Add Malvani masala and little water and fry masala until oil separates on the surface
Add chicken and fry for 2-3 mins
Cover and cook for 3-4 mins
Add vatan masala
Add hot water to adjust consistency
Cover and simmer for 8-10 mins until chicken is cooked
Your chicken curry is ready
Serve hot with vade
