DAL TADKA
INGREDIENTS:
¼ cup arhar dal (Tuvar dal)
¼ cup red Masoor dal
1-2 tbsp Chana dal
Salt to taste
¼ tsp turmeric powder
INSTRUCTIONS
Wash and soak dals for 30 to 40 mins
Pressure cook the dals with salt and turmeric powder for 2-3 whistles.
Cool and keep aside
INGREDIENTS TO PREPARE THE DAL
2-3 tbsp oil or ghee
1 tbsp cumin seeds
1medium onion, chopped
1-2 tomatoes, chopped
5-6 garlic cloves, paste
2-3 inch ginger, paste
1-2 tsp hot chili powder
1tsp Shilpa’s Masala Mill. Kashmiri chilli powder
1-2 tsp coriander powder
Coriander leaves, chopped
INSTRUCTIONS
Heat oil in kadhai ( pot)
Add the cumin and let it splutter
Add ginger and garlic. Fry for 1min
Add onions and fry until golden
Add tomatoes and continue to fry until tomatoes are soft and oil is visible on the sides
Add chili powders and coriander powder
Fry for 1 min
Add the cooked dal
Mix well and simmer for 3-5 mins
Adjust seasoning if required
Add coriander leaves and switch off the gas
TEMPER
2-3 tbsp ghee ( can use oil)
½ tsp cumin seeds
2-3 dry red Kashmiri chilies
½ finely sliced onion
½ tsp garam masala
Pinch of hing
1-2 tsp red chili powder
Coriander leaves
INSTRUCTIONS
Heat ghee in a pan
Add cumin seeds and let them splutter
Add hing and onions
Add dry red chilies
Now fry this on a med-low flame until onions turn brown ( fried )
Add the red chili powder and little coriander leaves
Switch off the gas and pour this Tadka on the dal
Garnish with coriander leaves and a little garam masala
That’s it, your restaurant style Dal Tadka is ready
Enjoy with butter naans, tandoori Rotis or rice
