TENDLI SAMBHARIYA
This recipe is really easy and quick to prepare. It’s cooked with fresh ingredients like mint, coriander, and coconut along with minimal spices.

INGREDIENTS:
250 gms of tendli ( ivy gourd)cut lengthwise
1tsp cumin seeds
1tbsp sesame seeds
1-2 tbsp peanuts or walnuts, coarsely crushed
Chopped coriander leaves
½ cup grated fresh coconut
½-1 tsp sugar
1-2 green chilies
10-12 fresh mint leaves, chopped
1tbsp coriander powder
¼ tsp turmeric powder
1tsp red chili powder
¼ tsp mango powder or lemon juice
Salt to taste
Pinch of hing
2-3 tbsp oil
INSTRUCTIONS:
Heat oil in a pan
Add cumin seeds and hing and allow them to splutter
Add chopped green chili
Add sesame seeds
Add tendli and fry for 1-2 mins
Cover and cook for few mins
Mix together in a bowl the peanuts, coriander, coconut, mint leaves, salt, and sugar.
Keep aside
Check tendli and stir it a bit
Cover and continue to cook for 3-5 mins
No water is needed for cooking the tendli. It should brown a bit
Add the coriander powder, turmeric powder, and chili powder
Fry for 3-4 mins more
Add the previously prepared masala to the tendli. Add the mango powder
Mix well and adjust seasoning
Switch off gas
And that’s it, your easy and healthy Tendli Sambhariya is ready
