AYAM KERUTUK KELANTAN (INDONESIAN CHICKEN with KERUTUK spices)
Ingredients for grinding
2red onions
4shallots
4cloves garlic
2inch ginger
INSTRUCTIONS
grind all ingredients with little water if needed. Keep aside
OTHER INGREDIENTS
2kg chicken
1cup cooking oil
dry spices (2-star anise, 2-3 cardamom, cinnamon,2 cloves )
1tbsp Shilpas masala mill Kashmiri red chilli powder
1stalk lemongrass
1inch galangal, cut
1Pandan leaf
4tbsp KERUTUK spices dissolved in little water
Tamarind
400 ml of coconut mil
Little palm sugar
1-2 potatoes, peeled and diced
Salt to taste
2tbsp toasted coconut paste
1tbsp kecap manis
Few green and red chillies
Chicken powder ( optional)
Coriander leaves for garnish
1tbsp toasted coriander seed powder
1tsp black pepper powder
½ tsp toasted cumin seed powder
1tsp toasted fennel seed powder
INSTRUCTIONS
Heat oil in a pan
Add dry whole spices and fry
Now add finely ground paste and fry
Add red chilli paste or powder
Add lemongrass and the KERUTUK spices
Cook until oil separates on the sides
Add chicken,potatoes, salt and fry with masala
Add Pandan leaf
Cover and cook for a few mins
Add tamarind, coconut milk and palm sugar
Add the spice powders
Cover and simmer until everything cooks
Add kecap manis and toasted coconut paste
Add whole chillies
Add chicken powder (optional)
Simmer for a few more minutes
That’s it, your delicious Indonesian AYAM KERUTUK KELANTAN is ready
