MADURAI KARI DOSA (chicken and mushroom mince)
INGREDIENTS
2-3 tbsp oil
1bayleaf
½ tsp fennel seeds
Small cinnamon stick
2 cloves
2cups onion, chopped fine
2tsp ginger garlic paste
1tsp Shilpas Masala Mill Everyday Masala
1tsp Shilpa's Masala mill Kashmiri Chilli powder
1tsp Shilpas Masala Mill chicken -Mutton Masala
1tsp Shilpas Masala mill Tandoori masala
½ tsp Turmeric powder
1tsp Coriander powder
¼ tsp Cumin powder
¼ tsp fennel powder
1tomato,puréed
½ kg mince ( I’ve used chicken and mushroom together. you can use mutton or beef too)
1-2 tsp curd
Coriander leaves, chopped for garnish
INSTRUCTIONS
heat oil in a pan
Add bay leaf, fennel seeds, cinnamon,cloves and onion
Fry for a few minutes
Add ginger-garlic paste and continue to fry
Add all powdered masalas and tomato purée. Fry until masalas cook well
Add mince and fry
Add salt and curry powder
Add curd and fry
Add little water and cover and cook for a few minutes
Add coriander leaves and cook until oil separates on sides and mince dries
Your mince is ready
let’s make Kari Dosa
Ingredients
dosa batter
1-2 eggs lightly beaten
Mince curry
Oil /ghee/butter
INSTRUCTIONS
heat tavaa
Add Dosa batter and spread with a ladle., like an uttapam
When a few bubbles form, add a little egg in the center
Add mince and spread out in the center
Add ghee/oil/butter to sides of Dosa
Flip dosa and cook on another side too
That’s it Kari Dosa is ready
